Instructions:
Soak the Tapioca Pearls
Rinse tapioca pearls thoroughly, then place them in a small bowl and cover them with water. Allow them to soak for 45-60 minutes.
Prepare the Milk Mixture
In a large saucepan, combine 4 cups of milk and the first ¾ cup of white sugar. Heat the mixture over medium heat until small bubbles start to form.
Add the Tapioca Pearls
Once small bubbles appear, add the soaked tapioca pearls to the saucepan. Reduce the heat to a gentle simmer and stir frequently. Continue cooking for 15-20 minutes or until the pearls become translucent.
Beat the Eggs
While the pearls are cooking, beat the eggs in a medium-sized bowl. Gradually add the remaining ¾ cup of white sugar and continue to beat until well combined.
Combine the Mixtures
Slowly pour a stream of the hot milk mixture into the beaten eggs, about ⅓ cup at a time, stirring constantly. Continue this process until half of the hot milk mixture has been incorporated into the eggs.
Return to the Saucepan
Gently pour the contents of the egg bowl back into the saucepan, while continuously stirring to avoid curdling.
Thicken the Pudding
Cook the mixture for an additional 3-5 minutes, or until the pudding starts to thicken. Remember that it will continue to thicken as it cools.
Add Vanilla
Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract. This will add a delightful aroma and flavor to your tapioca pudding.
Chill and Serve
Transfer the pudding into serving dishes and let it chill until serving. You can enjoy it warm or cold, depending on your preference.
