How To Make Chicken Cordon Bleu Meatloaf:
Step 1: Preheat Oven: Preheat oven to 375°F (190°C).
Step 2: Combine Ingredients: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, milk, egg, garlic powder, onion powder, salt, and pepper. Mix all ingredients well until just combined.
Step 3: Shape Meatloaf: On a piece of parchment paper, flatten the chicken mixture into a rectangular shape, roughly 1/2​ to 3/4​ inch thick.
Step 4: Layer Ingredients: Layer the Swiss cheese and ham slices evenly over the flattened chicken mixture, leaving a small border around the edges.
Step 5: Roll Meatloaf: Carefully roll the meatloaf tightly from one short end to the other, using the parchment paper to help guide and lift the mixture.
Step 6: Bake: Transfer the rolled meatloaf to a greased baking dish (seam-side down). Brush the top with Dijon mustard and sprinkle with mozzarella cheese. Bake for 45-50 minutes, or until cooked through (internal temperature reaches 165∘F/74∘C) and the cheese is bubbly and golden.
Step 7: Let Rest: Let the meatloaf rest for 10 minutes before slicing and serving.
