I’m grateful to my German neighbor for sharing this dish—my husband loved it from the very first taste!

Ingredients
1 pound ground beef
1 packet taco seasoning
1 can (10 oz) diced tomatoes with green chilies
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn
2 cups shredded cheddar cheese
1 cup salsa
1 cup crushed tortilla chips
Directions
1. In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
2. Add the taco seasoning to the beef, along with the diced tomatoes with green chilies. Stir to combine.
3. In the slow cooker, layer the seasoned beef mixture, black beans, corn, and salsa.
4. Top with crushed tortilla chips and cover with shredded cheddar cheese.
5. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until everything is heated through and the cheese is melted.
6. Serve hot, garnished with your favorite toppings like sour cream, cilantro, or jalapeños.
Variations & Tips

For a spicier kick, add a chopped jalapeño or a pinch of cayenne pepper to the beef mixture. You can substitute ground turkey or chicken for a lighter version. If you prefer a vegetarian option, skip the meat and add more beans or some cooked quinoa for protein. For a creamier texture, mix in a half cup of cream cheese before serving.
