Lemon Crumb Bars

Ingredient Quantity
Large eggs 2
Sweetened condensed milk 1 (14-ounce) can
Fresh lemon juice 1/2 cup
Lemon zest 1 tablespoon
Instructions:
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Make the crust: In a large bowl, cream together butter and sugar until light and fluffy. Combine flour, baking powder, and salt; gradually add to butter mixture. Set aside 1 cup of crumb mixture for topping. Press remaining crumbs into prepared baking dish.
Make the filling: In a bowl, beat eggs until thick. Stir in condensed milk, lemon juice, and zest.
Pour filling over crust. Sprinkle with reserved crumb mixture.
Bake for 25-30 minutes, or until golden brown and set. Cool completely.
Dust with powdered sugar, if desired. Cut into bars.
